Vegetarian dishes for Easter (The Easter Bunny can let out a sigh of relief!)

Nothing says Easter like having dinner on the instead of Easter Sunday...Ok, maybe that doesn't say Easter at all, but nonetheless, I had a fantastic dinner with some great friends and here were my contributions to a great meal:

roasted apples stuffed with walnuts & zucchini
I am waiting until my website launch in May to divulge recipes, but rest assured, these roasted apple are delicious & amazingly simple to make. I use roasted apples a lot in different salads, and decided to take their roasting one step further in creating this appetizer! Yum!

baked potatoes & celery in a tarragon cream sauce

I remembered seeing a recipe in a Vegetarian cookbook awhile back for 'baked celery' and this is my expansion on the original idea. I'm normally not the hugest fan of cooked celery (especially in a stand-alone dish), but throwing some tarragon & parmesan into the mix turned out to be a major success!
