Don't be scared of the vegan!

There is no doubt in my mind that many people hear the word 'vegan' and associate it with something resembling rabbit food (I know that's how I felt last year.) Now, fast forward to January 2010, a new year, a new decade; Replacing my usual 'go to the gym more' new year's resolution I had opted to expand my culinary prowess. It's been 2 1/2 months now, and let me tell you, I have definitely fallen in love with the deliciousness that can be a vegan meal.

A good friend of mine in Calgary, Lisa Jordan Krasnow, just so happens to be the proprietor of a local vegan wholesale foods company called Anahata Foods. Who better to show me the vegan ropes? Of course, she was more than happy to collaborate on some vegan dinner nights with me. Week by week, I slowly came around, and am now proud to say that I am tofu's #1 fan!

This week I was lucky enough to aid her in the creation of 'cornmeal & herb crusted tofu w/vegan walnut pesto and a green been pepperonatta.' When a plate of food this beautiful is served to you, it is refreshingly easy to forget that there is no meat at all. I finished my last bite with complete satisfaction and a full belly. Definitely not a meat & potatoes kind of guy anymore, and proud of it! Although, I do still appreciate a good steak, and bacon & eggs on Sunday morning, and...hey...I never said I was converted to vegan, I was just trying to broaden my horizons and yours too. :)
